One of my favorite things to do is create recipes with what I just have in the kitchen. This recipe only calls for 4 simple ingredients! You can challenge yourself as well to work with the supplies you have to make an amazing meal without all the fuss!

There are so many reasons to love beets. Not only do they have so many Beauty nutrients, they also taste amazing too. :)

Add more beets to your diet. Beets are loaded with betalaine, a nutrient responsible for protecting cells, enzymes, and proteins from environmental stress.

These beauties are also high in phytonutrient and antioxidant content. Betalain pigments that are found in beets support your bodies natural cleansing process which help to speed the excretion of toxins from your body!

Ayurvedic Connection

Now that I’m going deep into my Ayurvedic studies (I’m in my last semester of the first year of a doctoral program), I’ve become intensely interested in all things Ayurveda. Cumin one of them!

In Sanskrit, cumin is jiraka. Jira roughly translates to “that which helps digestion” and Ayurveda considers cumin a great digestive tonic that helps dispel gas, eliminate toxins, is a mild laxative, and is anti-inflammatory.  Cumin is believed to kindle agni, or digestive fire, and improve the absorption of minerals in the intestines.

New Recipe: Roasted Cumin Beets!
 
These beets can be served warm in a bowl or at room temperature over a bed of greens.

Ingredients
  • 6 - 7 small beets, peeled and cut into eighths
  • 1 Tbs. coconut oil
  • 1 Tsp. ground cumin
  • ¼ cup green onions, thinly sliced
  • 2 Tbs. lemon juice
  • Sea Salt, to taste
Instructions
  1. Preheat oven to 400°F. Toss beets with coconut oil and cumin in bowl; season with salt if desired.
  2. Spread beets on a baking sheet, and roast 30 to 40 minutes, rotating baking sheets halfway through and stirring beets occasionally.
  3. While beets are still hot, transfer to large bowl, and stir in green onions and lemon juice.
  4. Serve immediately!
