Acai Pops Recipe

With the summer heat still looming in the air, there’s no better time to sit back, relax and enjoy one of these pretty pops in hand. My End Of Summer Acai Fruit Popsicles are loaded with beautifying and health-enhancing frozen fruits like acai, mangoes and berries. It’s time to cool off and start glowing from the inside out!

If you’ve tried my recent Super Green Acai Beauty Bowl then you will know just how much I love using this incredible fruit. It’s packed antioxidants, minerals, vitamin C, healthy fats…and is amazingly naturally sugar-free!

Acai helps brighten skin, has powerful anti-aging compounds, nourishes our hair, fights harmful organisms, assists in reducing and/or maintaining a healthy weight and promotes our overall vitality. It also keeps our digestive system clean and functioning optimally. The list goes on an on, really!

Frozen vs Fresh

Many of you Beauties have asked about using frozen fruit when fresh fruit can be expensive or is not as handy. Which is better for you?

Well first things first—let’s remember that fruit becomes truly healthy when our bodies have been cleansed enough to handle it. This is when we have a good amount of healthy bacteria to break down the fruit sugar. I share more info on this topic in my Beauty Detox Foods book. Check it out here!

While fresh is usually best, frozen fruit holds up pretty great. And acai, which is harvested in the Amazonian rainforest, has to be sourced frozen (or powdered). My favorite is the Sambazon Unsweetened Acai Smoothie Packets, as they use sustainable farming practices. The acai berries are picked at their peak of ripeness, flash frozen, and much of their precious nutrition stays intact.

As for temperature, while yes, our bodies have an easier time digesting and breaking down room temperature or warm foods, this doesn’t mean we can’t have ever have cold foods… but I wouldn’t add any additional ice when you’re using frozen fruit.  As long as you are drinking your hot water and lemon followed by your Glowing Green Smoothie®, you can vary things up a bit throughout the rest of your day.

As with fresh, try to purchase organic frozen fruits, whenever you can.

Create overall balance in your system by consuming the right kind of probiotics, which feeds off sugar and eats candida!

Prepare ingredients.

In a blender, combine Sambazon Acai packs, banana, mango, peaches and coconut nectar.

Blend until smooth. Set aside.

In your popsicle mold, fill half way with Açai blend.

Combine coconut water and lemon juice. Add berries and fill popsicles ¾ of the way with the coconut lemon mixture. Freeze until solid, at least 4 hours preferably overnight.

What we want to remember to do is assist our bodies whenever and wherever we can with beautifying and health-enhancing ingredients and that includes in our popsicles too! :-) With summer nearly over (even though I eat these year round), don’t you think it’s time to give these little guys a go?!

End Of Summer Acai Fruit Popsicles Recipe

Serves: 10 Popsicles
Ingredients
  • Smoothie Layer
  • 2 pure unsweetened Sambazon acai packets
  • 1 ripe Banana
  • ½ cup Frozen mango
  • ¼ cup Frozen peaches
  • ½ cup coconut water
  • Coconut nectar to taste
  • Fruit Layer
  • ½ cup coconut water
  • 1 lemon juiced
  • Thinly sliced strawberries and/or blueberries
Instructions
  1. In a blender, combine Sambazon Acai packs, banana, mango, peaches and coconut nectar. Blend until smooth. Set aside.
  2. In your popsicle mold, fill half way with Açai blend. Add sticks and freeze until firm.
  3. Combine coconut water and lemon juice. Add berries and fill popsicles ¾ of the way with the coconut lemon mixture.
  4. Freeze until solid, at least 4 hours preferably overnight.
