Sweet Beet Smoothie

I just think this is a great time of year to eat beets! This is the magical time of year where ever so slowly (depending where you live of course), the long winter starts to turn the corner into the newness and freshness of Spring. Hooray!

So how do beets fit in? First of all, they have amazing detoxifying properties, which is SO important this time of year to help cleanse and support us in blasting out any stagnation and buildup from the winter, and not being as active and moving around as much, etc. They are also an amazing blood builder, to help bring more oxygen into your system and help with greater energy.

So here’s what I got for you today, to help get more beets in your life: my Sweet Beet Smoothie Recipe.

This recipe is packed with not only all the vitamins and all that cleansing beet goodness, but the rich antioxidants and dietary fiber from the apple, healthy digestive boost from the ginger, high-nutrient, low-calorie spinach (move over Popeye!), and energy boosting elements from the dates—you’re sure to be in fine-form to tackle the rest of your afternoon.

The Ruby Root…Beets!

Your first encounter or a few might have gotten you to thinking beets are earthy and kinda gross. But I encourage you to give them another chance! Tastes can change over time. I used to not like avocados…and who knew I would be an avocado queen one day, eating them pretty much every day at this point. :) So whether you currently love beets (as I do!) or are working on getting to be friends with them, it’s helpful to know some of their amazing benefits:

Here are a few of my favorites:

Detoxification: Beets thin bile (which is an alkaline fluid that aids digestion and is secreted by the liver and stored in the gallbladder). This means, we will be improving liver function and increasing detoxification—one of the biggest factors in boosting beauty from within.

Prepare all ingredients.

Add your sliced apples into blender.

Next, add your spinach and dates.

Add the coconut water and blend until all ingredients are fully combined.

Sweet Beet Smoothie Recipe

Serves: 1 serving
Ingredients
  • 2 cups coconut water
  • 1 red apple, cored and sliced
  • 1 small or ½ medium beet, raw – (use a high powered blender or cook beet before blending)
  • ¼ teaspoon fresh ginger root
  • ½ bunch spinach, chopped and rinsed
  • 6 dates (to taste) ---if less sugar is desired sweeten to taste with stevia instead
Instructions
  1. Add the coconut water, apple, beet, ginger root, spinach and dates to the blender. Starting the blender on a low speed, blend until smooth. If needed gradually increase to higher speeds and blend until smooth.
  2. Enjoy!

Note: You will need a really high-powered blender if using raw beets.
