Here is the latest recipe for this week- a version of raw Lettuce Wraps! It’s the height of summer and we should all be eating more raw food in general, which is hydrating and full of enzymes and vitamins, to keep us energized and feeling refreshed in these hotter months.

I made this today twice- once, and then I changed the sauce around a little bit and made another 3 lettuce wraps right when my hub came home- and he started chomping away right away also, and loved these! That is how I know they are good.

Hempseeds digest well and I find them pretty light, so while I try  to avoid eating large amounts of dense nuts in the middle of the day, I would say this is a great lunch or mid-afternoon snack. It’s crunchy, creamy, has a mixture of textures, and is innately satisfying.

Okay, now for our special recipe assignment for this week!

I want you to use your creativity and see how you might like to vary the sauce and see what other veggies you want to include. And instead of hemp seeds, you might like avocado or another seed or even mushrooms?

I am a huge fan of crunchy romaine lettuce. It should never be confused with sickly iceberg. Oh no siree! Look at it’s beautiful green leaves. It’s garden fresh, and I pick up mine weekly from the Richmond Farmer’s Market here in London.

The sauce is yeah-I’ll say it- delicious! Simple but wait until you taste everything combined together! And there’s only enough to spread on the right amount- not so much that it feels heavy. Just perfect, if I do say so myself. :)

I used broccoli sprouts for my wraps, which are said to have upwards of 50 times the antioxidant capacity of regular broccoli. But you can use clover or any type you like, or use all new veggies for your version! You know how much I love sprouts though- bursting with proteins, enzymes, vitamins and minerals.

Raw Dijon-Hempseed Lettuce Wraps

Yield: 3 lettuce wraps

  • 2 tsp Dijon mustard
  • 1 1/2 tsp. tahini
  • 1 tsp. low sodium tamari
  • 3 beautiful, unbroken washed romaine lettuce leaves
  • 1 1/2 Tbs. raw shelled hempseeds
  • Sprouts
  • Tomato slices

In a small bowl or container mix together the Dijon mustard, tahini and tamari. Spread onto the 3 lettuce leaves evenly. Top 1/2 Tbs. of hemp seeds onto each lettuce leaf, and then top with some sprouts and tomato slices.

That’s it!

Raw, delicious, fast and super easy…not to mention nutritious and beautifying, with a fantastically wide range of nutrients, including omega fats, vitamins, antioxidants, fiber, enzymes, minerals…and so much more! Nature is so good to us.

1) Try out this recipe with the ingredients that you have at home, or items you pick up on your next grocery trip. You can follow it exactly, or you can substitute your own ingredients and put your own “spin” on it. There’s a lot of ways to adjust the sauce or veggies to make this your own creation.

2) When you make your own version, be sure to write down the ingredients, take pictures and turn it into a simple blog post. That’s what our girls are doing each week, many who have never blogged before this!

Once your blog post is live, be sure you share it — while linking back to this post.

3) Be sure to also post your recipe post into the Private Facebook group, so that we and others can see it. We’ll like or share or comment on all recipes that you send our way, to support you and show the community your amazing work.

All that can be done in under an hour (not including making the actual recipe) — and it’s well worth the effort to part part of this movement and learning to blog.
